Our Atlantic Salmon is responsibly sourced from farms in Nova Scotia.

Our cedar boards are hand cut from Canadian renewable forests and are fully compliant with EU legislation on food contact material.

Our maple sugar is made in Nova Scotia.

Our Cedar Planked Atlantic Salmon is available in 160g single serving portions in two delicious flavours: Maple & BBQ Sauce, Maple & Hickory, and a fantastic 670g whole side in Maple & Hickory.

Entertaining

The 670g whole side serves 6 and is the perfect presentation for your customers to share or for the hosts to impress their guests at dinner. It is easily prepared in the oven, and presented on the plank to diners, adding something special to any occasion!

Convenience

Easy to prepare with minimal handling. The chef simply thaws in cold water for 25 minutes or until fully thawed, removes the packaging and places the board (with salmon on) in the oven or on the barbeque. The salmon will cook perfectly every time with a delicious wood smoke aroma and serves easily from the board.

Cooking Instructions

From Thawed

Rational Combi-Steamer - Remove vac pack and with salmon still on plank, place in a shallow tray with a little water to partially cover plank. Set to 90% moist heat/10% dry heat in combi mode, 200°C, fan speed 4. Cook for 10 mins (160g) or 16 mins (670g) or until fully cooked.

Fan-assisted oven - Cook at 200°C for 14-18 mins (160g) or 18-20 mins (670g) or until fully cooked.

BBQ - Cook for 14-18 mins (160g) or 18-20 mins (670g) or until fully cooked.

From Frozen

Rational Combi-Steamer - Set to 90% moist heat/10% dry heat in Combi mode, 200°C. Place frozen plank in vac pack inverted in hot water bath (Bain Marie) and cook for 15 minutes.

Fan-assisted oven - Set to 200°C. Place frozen plank in vac pack inverted in hot water bath (Bain Marie) and cook for 15 minutes


These cooking times may require adjustment. Commercial ovens vary a great deal in the cooking times required so servers need to ensure that they have the ideal cooking time for the make and type of oven used in their kitchens.
