Cumberland Sausage with Cherry and St Lawrence Gold Maple Syrup

This recipe is a wonderful summer style dish and a great way to enjoy British summer fruits and the great British sausage. The sweetness of the cherries and maple syrup are the perfect accompaniment to sausages. This recipe is also great to put into a hot dog roll as well if your cooking for the garden.



  • 8 Cumberland sausages
  • 1 tablespoon of olive oil
  • 4 medium red onions peeled and cut into 8 equal pieces
  • 1 teaspoon of salt
  • 1/2 teaspoon of cracked black pepper
  • 200g of British cherries
  • 3 tablespoons red wine vinegar
  • 2 tablespoons of St Lawrence Gold maple syrup
  • 1 teaspoon of fresh thyme
  • 1 teaspoon of fresh rosemary


  1. Place the sausage, onions, oil, salt and pepper into a roasting tray and cook in a pre heated oven for 15-20 minutes at 180°C.
  2. Meanwhile cut the cherries in half and remove the stones.
  3. When the sausages are golden brown and the red onions are softened add the cherries, vinegar and St Lawrence Gold maple syrup.
  4. Finally add the roughly chopped herbs and return to the oven for a further 10 minutes.
